Serves: 4 | Prep Time: 10 mins | Cook Time: 25 mins

Ingredients:
– 1 tbsp olive oil
– Bunch of spring onions chopped with green and white parts separated
– 1 courgette (grated)
– 1 celery stick (cubed)
– 1 red pepper (cubed)
– 50-75g chorizo (cubed)
– 1 garlic clove (crushed)
– 75g orzo pasta
– 1 tsp smoked paprika
– 200g can sweetcorn
– 1 large tomato (chopped)
– 350ml chicken or veg stock
– ½ lemon (zested and juiced)

Recipe:
- Heat the oil and fry the white parts of the spring onion with the pepper, celery and chorizo for 8-10 minutes.
- Add the garlic, orzo, paprika, sweetcorn, tomato and courgette. Fry for 2-3 minutes more.
- Now pour in the stock, stir well and simmer for 8-10 minutes, until the orzo is tender.
- Stir through the green parts of the spring onion, lemon juice and the zest.
- Serve and enjoy!
