Slow Cooker Recipe
Serves: 4 | Prep Time: 10 mins | Cook Time: 4 hours

Ingredients:
– 1kg boneless, skinless chicken thighs
– 100g sugar
– 120ml soy sauce
– 4 tbsps cider vinegar
– ½ tsp ground ginger
– 1 clove garlic (minced)
– ½ tsp pepper
– 1.5 tbsps cornflour

Recipe:
- In a bowl, whisk together the sugar, soy sauce, cider vinegar, ground ginger, garlic and pepper. Place the chicken in the slow cooker and pour over the sauce.
- Cook on low for 4-5 hours until the chicken is tender.
- Once the chicken is cooked, transfer it to a bowl and shred it with two forks.
- Skim any fat from the remaining sauce and then pour the liquid into a pan. Bring it to the boil to reduce.
- Transfer the chicken back to the slow cooker to keep warm.
- Mix 2 tablespoons of cold water with the cornflour and then add this to the saucepan. Stir the sauce until thickened.
- Combine the sauce with the chicken. Serve with rice.
